Hummus bi tahina, or simply hummus, is the name of a typical Middle Eastern chickpea paste. Even though this food was already part of Ancient Egypt’s gastronomy, it was not until a few years ago that it became a huge deal in Western countries.
As with the pesto recipes, hummus has multiple variants but they all take a generic base as a starting point (chickpeas, tahini or sesame paste and lemon juice). From there, every hummus is a world of possibilities. You can add peppers, garlic, cumin, etc. On this occasion, we will version a recipe by Jamie Oliver using yogurt, ají and EVO, in addition to the three basic ingredients.
Ingredients: |
• 1 jar of cooked chickpeas.
• 3 tablespoons yogurt.
• 1 tablespoon of tahini.
• Salt to taste.
• Ají to taste.
• 15 ml. EVO.
Steps to follow: |
• Put all ingredients into the container of a food processor or blender.
• Blend for about 10 minutes or until you obtain the desired consistency.
• Serve on a toast, with bread sticks or crudités.
Note: If you don’t have access to tahini, you can use peanut butter, though it won’t be the same. |
