Mafaldas with Avocado and Pistachios

Today I bring you a vegan recipe both yummy and healthy: Mafaldas with avocado and pistachios.

Ingredients:

• 200 g. of short mafaldas.

• 1 avocado.

• Juice of 1 lemon.

• 25 g. of chopped pistachios.

• 30 ml. of EVO.

• Salt.

• Chili to taste.

Steps to follow:

• Cook the mafaldas for 9 minutes in boiling water.

• Peel the avocado and cut into pieces.

• Put the avocado into a whisk glass, or food processor, along with the AOVE, lemon juice, salt, and chili (hot spices are optional).

• Blend until creamy.

• Drain the pasta and pour into a bowl.

• Top with avocado cream and sprinkle with pistachios.
